I remember when during the holiday, I would always bake for my family. They loved when I would pull out all my baking utensils and my KitchenAid mixer and try fun recipes. I would find them on the Martha Stewart show or from the web. Now that my kids have gotten older, I don’t really have the time or patience, I kinda put it on the back burner. I always see things on Pinterest that I want to try, get excited but after reading all that it entails, I quickly say never mind and give up lol.
I used to be the “queen of classroom” and would bake cute treats for my kids pre-school and so on but now, I just don’t have the passion like I used to, sigh. Maybe one day I will find my mojo again who knows! I saw this Vanilla Bean Christmas Sugar Cookie recipe and wanted to share it with you all, it looks yummy and put me in the holiday mood…Happy Baking!
Recipe: Vanilla Bean Christmas Sugar Cookies
ingredients:
3 c unbleached, all-purpose flour
2 tsp baking powder
1 c vanilla sugar {or regular sugar}
2 sticks butter, cold and cut into chunks
1 egg
3/4 tsp pure vanilla extract
1/2 tsp pure almond extract
1 vanilla bean, scraped
Yield: 2-3 dozen cookies Prep Time: 40 minutes Cook Time: 10 minutes
Preheat oven to 350 degrees. In a small bowl stir flour and baking powder together. Set aside. Cream butter and sugar together. Stir in egg, extracts and vanilla bean. Slowly incorporate dry ingredients. Roll dough out onto floured surface to be just over 1/4″ thick. Cut cookies out using cookie cutters and place onto parchment paper lined baking sheet. Freeze 5-7 minutes, then bake 10-12 minutes. Cool 3 minutes on baking sheet, then remove to cooling racks. Decorate as you like. Recipe by Lauren’s Latest

This looks like an easy recipe. I am not really in the baking mood but my two little people love it. I think we’re going to try this. Their favorite gift to give everyone on Christmas day is homemade cookies.
