It’s almost Thanksgiving and boy are the streets crowded! I headed to the mall yesterday to pick up a few things and I could barely get down the road, geesh! Where it usually takes me 3 to 5 minutes tops, took me about 15 minutes, yikes! It’s ok though, it will be over soon lol. I saw this yummy looking Sweet Potato Chess Pie recipe on the internet and I wanted to share it with you. I know I am missing my godmother’s sweet potato pie back home, it was the best, sigh!
Sweet Potato Chess Pie Recipe- A fun holiday twist on a classic Southern pie using Land O Lakes® Butter. This is a great way to jazz up both chess pie and sweet potato pie renditions for the holidays!

Serves: 1 pie
INGREDIENTS
½ cup Land O’ Lakes unsalted butter, room temperature
1½ cup granulated sugar
3 large eggs
2 teaspoons yellow cornmeal
1 teaspoon all purpose flour
¼ teaspoon ground cinnamon
1 teaspoon vinegar
1 teaspoon pure vanilla extract
1 ½ cups mashed sweet potatoes (About 1 ½-2 medium sized sweet potatoes peeled, diced, boiled until tender and mashed)
1 prepared pie crust in pie pan
INSTRUCTIONS
Preheat oven to 350 degrees.
Beat butter and sugar together on high until light and fluffy (about 4-5 minutes).
Add eggs one at a time and mix together until well incorporated.
Next add cornmeal, flour, cinnamon, vinegar and vanilla and finally slowly add mashed sweet potatoes into batter and beat until completely smooth.
Pour batter into prepared pie shell and bake for 45-50 minutes.
Cool for at least 4 hours and serve.
