If you really know me, then you would know that I LOVE salads! All kinds, flavors, etc they are my staple in my diet! I can eat them for breakfast, lunch and dinner. My teens are not too fond of salads but me and my husband live by them. The older I get, I find that it’s hard to enjoy the foods I once ate but with these healthy salads and recipes I’m finding online, they make me feel so much better and healthier. While on Pinterest I spotted this scrumptious looking Chicken, Bacon, Fried Peaches & Corn Salad and wanted to share it with you. Enjoy and have a great week!

Serves: 4-6
Ingredients
4 slices bacon
1 red onion, cut into rings
1 ear of corns kernels
1 peach, cut into slices
2 heads Romaine lettuce, finely sliced
2 cups shredded cooked chicken breast
1 cup cherry tomatoes, halved

Honey Mustard Dressing:
1 tablespoons grainy Dijon mustard
2 tablespoons honey
¼ cup olive oil

In a heavy pan or skillet over medium heat cook the 4 pieces of bacon until golden and crispy, about 4 minutes on each side. Remove the bacon to a cutting board and chop it up into bite sized pieces.
Return the pan to the heat with the bacon fat and cook the red onion rings with a sprinkle of salt until tender, about 4 minutes on each side. Then add the peach slices, cooking them about 1 minute on each side. Lastly add the corn and sauté for 1 minute.
Arrange the lettuce on a platter or in a bowl and add the chicken, tomatoes and avocado and the bacon, onion, peaches and corn.
In a small bowl whisk together the honey mustard dressing and season to taste with kosher salt. Drizzle the salad with the dressing and serve immediately
