My son Pootie had been asking me for weeks to make one of his favorite meals and that’s Chicken Fajitas. Today I had some extra time, so I remembered that this was a quick and tasty meal, so I got to cooking. He instantly could smell what I was cooking and got very excited! This is one of those meals that’s so easy to cook and your whole family will love. It’s a bit messy while you’re eating it but trust me, it’s definitely something that your kids would want more of.
Once I prepped everything with things I already had in my panty and fridge, it literally took about 20 minutes, that’s it. I love all the flavors and bright colors from the vegetables. It’s pretty simple to make if you are not one to like to be in the kitchen too. I added a side of yellow rice and in a snap, lunch was served! Chicken Fajitas Ingredients:
1 lb. boneless skinless chicken breasts
Olive Oil
Kosher salt
Freshly ground black pepper
season salt
garlic powder
Fajita seasoning
Onion
Shredded Cheese
Sour Cream
Tomato
Salsa (Optional)
Cilantro for garnish
3 bell peppers, thinly sliced
1 large onion, thinly sliced
Tortillas, for serving
- Season chicken with salt and pepper, then add to bowl and toss to coat with Olive Oil. Let marinate in the fridge at least 30 minutes or up to 2 hours or a day.
- When ready to cook, heat remaining tablespoon oil in a large skillet over medium heat. Add chicken and cook until golden and cooked through, 8 minutes per side. Let rest 10 minutes, then slice into strips.
- Add bell peppers and onion to skillet, fajita seasoning and cook until soft, 5 minutes. Add chicken and toss until combined. Serve with tortillas.
