Recipe: Quick And Tasty Chicken Fajitas

My son Pootie had been asking me for weeks to make one of his favorite meals and that’s Chicken Fajitas. Today I had some extra time, so I remembered that this was a quick and tasty meal, so I got to cooking. He instantly could smell what I was cooking and got very excited! This is one of those meals that’s so easy to cook and your whole family will love. It’s a bit messy while you’re eating it but trust me, it’s definitely something that your kids would want more of.

Once I prepped everything with things I already had in my panty and fridge, it literally took about 20 minutes, that’s it. I love all the flavors and bright colors from the vegetables. It’s pretty simple to make if you are not one to like to be in the kitchen too. I added a side of yellow rice and in a snap, lunch was served! Chicken Fajitas Ingredients:

1 lb. boneless skinless chicken breasts

Olive Oil
Kosher salt
Freshly ground black pepper

season salt

garlic powder

Fajita seasoning

Onion

Shredded Cheese

Sour Cream

Tomato

Salsa (Optional)

Cilantro for garnish

3 bell peppers, thinly sliced
1 large onion, thinly sliced
Tortillas, for serving

  1. Season chicken with salt and pepper, then add to bowl and toss to coat with Olive Oil. Let marinate in the fridge at least 30 minutes or up to 2 hours or a day.
  2. When ready to cook, heat remaining tablespoon oil in a large skillet over medium heat. Add chicken and cook until golden and cooked through, 8 minutes per side. Let rest 10 minutes, then slice into strips.
  3. Add bell peppers and onion to skillet, fajita seasoning and cook until soft, 5 minutes. Add chicken and toss until combined. Serve with tortillas.
  4. I added yellow rice for a side dish
